You can try using gfxCardStatus.app to pin your graphics card to integrated. That might stabilize it enough for you to keep working.

Well, I left Sublime running all weekend and I’m clicking around the folder tree right now and it’s not crashing. That being said, I got my coworker to disable git and his still crashed. Although, I’m not sure I got him to restart Sublime after disabling git. Will have to wait until he’s back on Wednesday for anything further from him.
