It used to be easy to switch between color schemes, now it seems impossible unless your color scheme is a default. This is a problem on multiple fresh installations; using color switcher and not. What happened? Why don’t color schemes work any more?

They work like a charm here.
You might run into trouble with some older color schemes though as the scope names of most syntaxes were changed during the recent year(s) in order to find a common naming scheme for all different languages.
In the past a color scheme always needed to be written or at least optimized for the desired or any syntax it is used for as each syntax used different scopes for even the same thing. Therefore a kind of “more general standard” was developed in order to make it easier for color schemes to create a consistent user experience for all/most default syntaxes.
But this change would possibly require some updates on the color scheme side as well to make them use the new scopes, which haven’t happened for most older color schemes.
