There are 3 options for line endings, Unix, Mac OS9 and Windows.
Can anyone expelling when and why you might change these?
Does changing the line endings physically change your file when you save, or is this simply a viewing convenience?

You might, on Windows, want to edit a config file that is for Linux only. Linux understands \n, not \r\n which is for Windows.
so yes, changing line endings obviously change the physical file.
