I think the idea of keyboard bindings that include multiple key presses in a row is fairly common for software that is heavily keyboard driven since it increases the number of potential key bindings that are available.
The first thing that comes to mind in this regard (historically) would be the Emacs text editor, where my old man brain immediately associates it with the acronym “escape meta alt control shift” because so many key bindings are multiple sequences like this. I don’t know where the practice originally started, though.
As to the origin of that particular key binding, if I had to guess it would be that it’s something that some other text editor like TextMate also supported so Sublime adopted it early as a default to ease the transition of new users. That’s just a guess though.
C-k is IMO a good prefix, because k directly lays under a finger on the main row. IMO this is better than the emacs C-c / C-x prefix. And b is the first char of Bar (as m ist the first char of map) so you can easily remember that.
