Syntax highlighting 'text' is not selectable

I’ve got a question. I’ve opened a yaml file and wanted to turn off its syntax highlighting. My idea was to select Text as the highlighting option … but this option is grayed out. Why?

The syntax option is Plain Text and it should not be grayed out.
