I just bought Sublime for my MAC and every time I paste text from an excel sheet it add “” to every line on the paste including blank lines. WHY ???"

If this is not able to do this and I’ve got to go back to spinning up a VM for notepad++. Simple text paste and it falls down?

This is actually Excels doing and not Sublime Text. See below, that when it is copied from excel, it adds quotes because it is multi line.
