Startup Timeout on Unavailable Projects

I am running into an issue with Sublime and perhaps I am not using folders correctly.

I am working on projects using a UNC path to a number of servers (via \server\WebApp) and I have added them to my folder list so that I can use GoToAnything.

However, these servers are only available when I connect via VPN to that customer site, so under normal circumstances, these projects are not accessible, and sublime is trying to load them during startup. So it takes several minutes before it times out and then I can’t even remove the project without it re-trying to establish the connection.

Is there a better way of doing this? I really want to take advantage of GoToAnything, but I am not sure how to tell Sublime to perform a deferred load on certain folders rather than at startup.

Suggestions?
