Being able to see spaces - as coloured dots - is useful in code files but merely irritating, most of the time, with plain text. Yet, Sublime allows one to show or hide white space - and that’s it; there’s no facility to discriminate between file types. I feel compelled to install another editor to handle plain text files.

I guess you’ve not tried Syntax Specific settings - turn whitespace off in Plain Text settings and on in general settings

Oh! Marvellous! For the record, that option, namely, ‘Settings - Syntax Specific’, is available via the Preferences drop-down menu.
