In Emacs we have Remember-Mode which allows one, among other things, to copy text from one document quickly into another without opening it. For example, I have a notes file where I can quickly “send” text from the current for later use. Is there something equivalent in Sublime?

This is better being done as an App rather than editor-specific feature honestly.

When you say App, can you explain it a little more?

a clipboard manager app or something like that, which will work everywhere.
