Love the feel but need a man page

Moving from textwrangler where I have a few bourne/bash shell filters set up that take the selected text as input, do something with it then replace what was the selected text with the output.
How can I do this sort of thing with Sublime please ?
I need step by step including what CMD-CTRL-ALT keys to press when etc.
Running on OSX Lion.
