I want to unset all default keybindings[i mean the factory keybinds]! and also plugin keybindings . Except things that are in my user keybindings.

The easiest way would be to specify an override file for each of then using PackageResourceViewer. You just open the.sublime-keymap files with that and replace the contents with {}.
