I still want access to syntax highlighting as it'd be nice to browse files without the diff. Some type of binding with git show maybe?
View Tree is what you're looking for. It is available through the command palette, the Tree header when viewing a commit, and ellipsis button in the header.
That's a better view, but it still shows the version control info, i'd just want a way to view the files plain but with syntax highlighting.

good one, but I mean more specifically to browse files without checking them out and the other git info on the file.
