I have no idea what I did, but now when I use the ‘Find in files’ search option it opens in a bottom panel instead of a new tab. I’d like it to be open in a new tab again, because that way I have all my previous search results saved there until I close the tab.

One of the options on the left hand side of the Find in Files panel is titled Use Buffer, click that guy.
