When activating the context menu by secondary-clicking (right-click) a branch in the tree view there is no option to hide the branch or tag. I’d like for there to be an option to do this.

Do you mean from here the Remote Branch.sublime-menu?

Or from the File.sublime-menu?

No I mean from the commits view. Right clicking on a commit where there is a branch.

“Hide main” is the 3rd to last item in your screenshot

There is still a problem. If there are multiple branches at the commit, then you only have the option to “Hide All Branches on Commit”:

I’d like the hide/show options relative to the sub-menus for each branches (a the top of the context menu):

This is a useful feature request to have added.
