Force docs to save as 7-bit ascii

I hit File > Save with encoding, but don’t see ASCII as an option. How can I force Sublime to save files as 7bit ascii in lieu of UTF-8?

As long as you don’t use any extended characters, then UTF-8 is the same as ASCII7.
