Filetype association

I think this is the best title…

I currently have a generated file by the swiftmailer lib for symfony 2 with the extension .message which is a PHP serialised string which contains my email which has been spooled ready to be sent out for dev usage.

When I open it, I get the following content:

1245 sd48 45s2 1s8h 78ss ... 

Can I associate the filetype of .message to show the contents as if it were a .txt file. When using textedit or TextMate this file opens fine (which is what I currently use). Maybe a XXX.sublime-settings file or something?
