Cannot tell the difference in the editor between an en dash and an em dash

I can tell the length difference from the top bar, but the main editor itself doesn’t seem to show any difference between hyphens and the two kinds of dashes.

what font are you using?

The standard osx, Menlo Regular.
It’s just a little odd that the difference doesn’t show up in the body of the text.

The tabs use a non-monospace font while the text uses a monospace font. It’s most likely that the monospace version of Menlo Regular just displays like that. You could use another application to confirm this.
