Best suggestions for using ST3 as an all-purpose notepad

I’d like to know if there’s any particular plugin or file-type that would work best for general note-taking. Ideally, I’d like to just jot down notes; where certain stuff like phone numbers could automatically be highlighted with a different color (and/or bold face font type).

I’m guessing I’m not the first person who’s tried to use ST as a notepad; so, hoping someone may have some userful tips for doing this kind of thing.

Currently, I’ve been using the file type/extension: .ps1 notepad.ps1; since I have Powershell support in ST via plugin.

This is awesome. I don’t know how I missed this. I’m installing right now to all my major instances of sublime.
