This is on the latest Mac OS.
With Affinity Designer and Affinity Photo Version 1 I could open both apps in Sublime text Like this:
“application”: “Affinity Designer.app”,
Now with the V2 path I can’t open them for example like this:
“application”: “Affinity Designer2.app”,

I don’t have a mac any longer, but have you verified that the app name is correct? (or if you would, I would expect Affinity Designer 2 and not Affinity Designer2 here)
Don’t have a mac. Bought an Affinity 2v Universal license recently. This gives access to every available platform installer. I think Odatnurd is right.
