I have a bunch of files open, but they are aren’t showing in the sidebar.
Sublime Text 4 build 4143. MacOS Monterey 12.6.5.

It’s not clear from your image, but it looks like that window only has 2 open files?
It looks to me like there are 3 files open in currently selected window according to position of the active file tab. “Open Files” however shows two files, only.
There are actually 12+ files open, see the tab at the top. But the sidebar is only showing 2.
Those aren’t files, those are separate windows. You have 12+ open windows, each of which can have any number of open files. The one in the screenshot has 2/3 open files and those are also shown in the side-bar.
MacOS lets you group windows into those top tabs you see, we call them “native tabs”. Other apps also have this functionality and behave the same way.
