Hi there. I am using a dark theme with the app and I notice it does show a different colour for the front matter, headings and links wrapped in tags. (red-ish and green colour). Is it possible to do/add the same feature for markdown links with square brackets followed by parentheses?

You can either switch to a color scheme that does (like most of the defaults) or customize the color scheme of your choosing as described here: https://www.sublimetext.com/docs/color_schemes.html#customization
