I’m finding that hitting Ctrl+F in linux will populate the find field with the highlighted word, but in OS X it will not (using the equivalent Cmd+F). The whole behavior of Ctrl+F and Ctrl+E is inconsistent between linux and mac.

This is by design: Sublime Text adheres to the current platform conventions whenever possible. FWIW this is controlled by the find_selected_text setting.
